Craft Brewing History: Mo-Mo English Bitter at Bonesaw Brewing

In a craft beer world dominated by IPAs, sometimes it takes a brewer-to-brewer collaboration to bring a classic back into the spotlight. That was exactly the inspiration behind Mo-Mo, a traditional English Bitter brewed at Bonesaw Brewing in Glassboro, New Jersey, in collaboration with Crisp Malt and our North American Sales Manager, Josh Wurzbacher.

Together with Bonesaw Head Brewer AJ Stoll, Josh set out to create a beer that was simple in design, rich in character, and above all, malt-forward. What resulted is a pint that honours the legacy of English brewing, showcasing heritage malt Chevallier in all its subtle, elegant glory.

A Collaboration Rooted in Friendship (and a Love for Malt)

“Josh has been a friend since he worked at Yards years ago,” says AJ. “When he started working for Crisp, we talked about how much we like English malt and decided it would be nice to make a ‘brewers’ beer’ for a change instead of more hazy IPAs, etc.”

The choice of style was a no-brainer. The duo settled on an English Bitter, technically a mild, AJ notes, that would allow them to focus entirely on the malt. Specifically, Chevallier malt.

“English beer styles have fallen out of favor with the general public, it seems,” AJ admits, “but there are still fans, like Josh and me. Also, being that Chevallier is such a showcase heritage malt, we wanted to do something simple and malt-forward.”

The Beer: Mo-Mo English Bitter

This beer may be modest in alcohol and ingredients, but it’s anything but ordinary. Chevallier shines here as the sole driver of flavor and aroma, bringing notes of toasted biscuit, light toffee, and a touch of dried fruit.

“Chevallier is awesome and gave us no problems at all,” says AJ. “The extract is good, the color is beautiful, and the flavor is fantastic.”

Brewhouse Efficiency Meets Old World Tradition

What makes this collaboration especially unique is Bonesaw Brewing’s brewhouse setup. AJ and his team use a 20-hL mash filter system, a rare piece of equipment at this scale in North America.

“Our mash filter is fairly uncommon and definitely special,” AJ explains. “We can knock out a triple brew day in 8 hours with a mash efficiency of up to 98% and using significantly less water than a traditional brewhouse’s sparge/lauter.”

For Josh, brewing on this system was an experience in itself.

“There are only a handful of brewhouses of this kind, at this size, in all the U.S.,” Josh noted. “It added an exceptionally modern twist to making this classic beer.”

Sensory Spotlight: All Eyes on the Malt

Mo-Mo drinks like a love letter to malt. With just one base malt and one hop addition, there’s nothing to hide behind, and that’s the point.

“Mo-Mo is a simple English mild, a kind of table beer,” says AJ. “Anything you smell and taste for the most part is Chevallier.”

The flavor is warm, rounded, and gently complex. Its restrained bitterness lets the malt do the talking, resulting in a beer that’s as educational as it is enjoyable.

Collaboration for the Sake of Community

Beyond the brewing, this collaboration was about camaraderie.

“It’s always fun to brew with friends,” AJ reflects. “Ninety-eight percent of why I brew and run a brewery/taproom is social.”

That energy was evident throughout the brew day, from shared laughs to collaborative problem-solving. The Bonesaw and Crisp Malt teams weren’t just making beer; they were building community.

Mo-Mo on Tap: A Glass of History

Released in August 2025, Mo-Mo debuted to Bonesaw Brewing’s local crowd with the following invite:

“Sometimes the simplest things are the most elegant, and this English mild is a perfect example… Come taste a piece of brewing history.”

For AJ, the historical resonance of brewing with Chevallier added to the experience.

“It’s a glass of history,” he says. “It’s cool to use and taste the OG British malt that helped start the Western beer industry.”
