Brewing Up a Celebration: Crisp Malt and All Day Brewing Join Forces for 60 Years of Maris Otter

At Crisp Malt, we’re passionate about great malt and great beer — and when those come together in the hands of talented brewers, magic happens. That’s exactly what we saw on Friday, 2nd May, when we teamed up with All Day Brewing and Mr Winter’s Brewery for an exciting collaboration brew to mark 60 years of Maris Otter malt.

This wasn’t just any brew day — it was a celebration of one of the world’s most iconic malts; Maris Otter. Together, we crafted an American Pale Ale built around our beloved Maris Otter, using 95% Maris Otter Malt and 5% Torrefied Wheat to ensure beautiful head retention.

As All Day Brewing put it, “We used a lot of the Crisp floor-malted Heritage Range in our Let’s Cask range, so we wanted to brew ours with Maris Otter No.19. It was a dead simple malt grist — 95% Maris Otter and 5% Torrefied wheat for head retention. We discussed the beer style with Mark Winters and decided to go for a no-nonsense American Pale, a style we both brew fairly regularly! We added Simcoe hops to the kettle and Centennial dry hop. We think these punchy hops will complement the malt base and make for an American Pale with good depth and a nice dryness, so it’ll sip a treat.”

Adding a unique twist to the brew, All Day Brewing also used their own borehole water, known for its exceptionally hard profile — ideal for dark beers but, with some acid adjustment and a super-dry fermentation, brilliant for creating a balanced, full-bodied pale. As they explained, “The borehole water also helps our clarity — no haze here, all sparkling bright ales.”

Our Crisp Malt team, represented by Craft Sales Managers Danni Hammond and Rob Crane, had a fantastic time on-site at Salle Moor Hall Farm, home to All Day Brewing’s beautiful listed barn and taproom.

For Rob, it was an especially memorable experience: “A great day at All Day Brewing on what was my first collab brew day with Crisp. Jake and Mark wanted to use some Maris Otter No.19 in celebration of its 60th birthday and because they both love the malt. We brewed a classic American Pale, with a simple grist of floor-malted Maris from Crisp’s Heritage range, and torrefied wheat to promote head retention and mouthfeel. It was hopped with a load of Simcoe in the kettle and a Centennial dry hop. The aromas from both the malt and the hops in the brewhouse were delicious, and we can’t wait to sample the beer at City of Ale in Norwich!”

Danni shared, “A fantastic day spent with the guys from All Day Brewing and Mr Winters Brewing, brewing an American pale with our heritage No.19 Floor Malt in the most amazing listed barn — perfect to visit for a beer and a pizza.”
